Hello everyone. Right I know there is already a cookie recipe on here, but this is my mum’s favourite and foolproof choc-chip cookie recipe. She simply substitutes gluten-free flour for plain flour and voila!
Ingredients
125g / 4oz unsalted butter
100g / 3 1/2oz soft light brown sugar
75g / 3oz granulated sugar
1 large free-range egg
1/4 tsp salt
1 1/2 tsp vanilla extract
250g / 9oz plain flour (GF if necessary)
1/2 tsp bicarbonate of soda
150g / 5oz chopped milk chocolate
Method:
- Preheat the oven to 180C/160C fan/gas 4.
- In a heatproof bowl, melt the butter in the microwave. Leave to cool for 5 minutes then using a wooden spoon, beat in both sugars, the egg, the salt and the vanilla extract until smooth.
- Stir in the flour and bicarbonate of soda until the mixture forms a dough, then mix in the chocolate until evenly distributed.
- Line two large baking trays with parchment paper or grease well. Using a dessert spoon, make 24 round mounds of dough. Space evenly to allow the cookies to spread and bake for 10-12 minutes, or until the edges are just golden but the middles are still soft.
- Leave to cool on the trays for 10 minutes, then serve warm or transfer to a wire rack to cool completely.
